Easy Tofu Scramble | Vegan Breakfast/Brunch Recipe

This is an easy one to make on those mornings when you just need something hot and satisfying for breakfast. Get creative with this one. Other than the tofu and turmeric (for colour), you can pretty much add anything you would like. Mushrooms, black beans, potatoes, shredded cabbage, all  would have been a welcomed addition.



1/2 Block of Tofu (Extra Firm, Organic)

1 Red Pepper (Chopped)

1/2 Onion (Diced)

2 Cups Kale

1/2-1 Tsp Turmeric

Pinch of Black Pepper

Salt to Taste


Crumble tofu between your fingers into desired sized chunks. Add turmeric and black pepper. Stir in a tablespoon of water and mix until colour is uniform.

Heat fry pan on medium to medium-high. Add the red pepper, onion and tofu to the fry pan. Sauté the veggies and tofu for a few minutes. Add in the kale 2-3 minutes before you finish cooking. Stir until the kale wilts. Serve over potatoes, greens or your favourite toast.

While deliciously mimicking scrambled eggs fairly well, the beauty of this dish comes in the health department.

I like soy and don’t doubt it’s safety, but as with anything, keep it in moderation. Besides, even water can be bad for your health if you have too much.
