Easy Chocolate Chip Cookies (GF & Vegan)

I stumbled upon a vegan bakery the other day and thought I would treat myself to some cookies (which is rare) and support the biz. I paid $5 bucks for 2 small cookies. They were SO sweet and left me feeling groggy and tired the next morning. Sugar hangover.

That’s why I wanted to share this recipe with you guys. It’s easy, relatively healthy and really delicious. Better yet there is no sugar added (minus the chocolate chips) and they are very cheap to make.

Play around with the recipe and let me know how you change it. I don’t put exact measurements on most of my recipes because I don’t cook things that need much measuring but hear is a rough measurement of ingredients used:

1.5 cups rolled oats (ground up to make oat flour)
1 cup rolled oats (not ground up)
3 ripe bananas, chopped
1/4 sunflower seeds
1/4 pumpkin seeds
2/3 cup unsweetened shredded coconut
2/3 – 1/2 cup raisins
1/2 vegan chocolate chips (optional)
1 flax egg (2 tbsp. flax seeds ground up and mixed with 3 tbsp water)
1 tbsp baking soda
juice of 1 lemon (add just before baking)

Preheat oven to 350 degrees. Make the flax egg and let sit for a few minutes and put all other ingredients in a large bowl. Mix dry ingredients with flax egg by hand or with mixing spoon, make sure to mash the bananas well. When all the ingredients are mixed, add lemon juice and mix again. Spoon mixture out onto a baking sheet and bake for 15 – 20 mins depending on cookie size!

Be sure to have fun and play around with the ingredients! I love experimenting. Other things you can add are cinnamon, dates, cocoa powder, nut butter or vanilla. The possibilities are endless!

Through this channel I want to show you that eating vegan doesn’t have to be difficult, expensive or limiting. You can make it what you want, but I like to keep it simple, cheap and delicious.
