Curried Lentil and Cauliflower Stew
This is an easy stew that is very hearty, warming and SUPER NUTRITIOUS!
Be prepared.. there probably won’t be any leftovers!
Ingredients
1 1/2 Heads of steamed cauliflower
5 Medium sized steamed carrots
1 cup cooked red lentils
1 Onion (chopped)
1/2 Zucchini (chopped)
2 -4 Cloves of garlic
Cilantro (optional – to taste)
Curry powder or paste
1 tbsp of Coconut Mana (optional)
1 tsp cumin
1.5 – 2 cups Low sodium vegetable stock
Salt and pepper to taste
1. Steam carrots and cauliflower until soft. (15-20 minutes)
2. While those are steaming, put 3/4 of a cup of dry red lentils in 1-1.5 cups of water (this can vary, use enough water to cover lentils by at least an inch).
3. Boil lentils until cooked through and there is no water (10-15 minutes)
4. Saute onion, zucchini, and garlic in a medium saucepan.
Once everything is cooked, add 3/4 of the cooked ingredients, all the spices and coconut mana into a blender or food processor and blend until most of it is blended (but there are still some chunks)
**I like to leave some of the ingredients out of the blender and chop them by hand and add them back in to the blended mixture for a more stew like consistency**
Put the stew back into a pot and heat together for a few minutes to allow flavours to meld.
Stir in chopped cilantro and add salt and pepper to taste. Take a deep breath and Enjoy!
This stew makes awesome leftovers, too! You can double the recipe and freeze some for those lazy nights at home when you need some good ol’ comfort food.
