Cauliflower Buffalo Wings
Ingredients: 1 or 2 heads of cauliflower, broken/cut into ‘wing’ sized pieces. (you can steam these before baking as it cuts down on the baking time)
In a blender/vitamix/blentec, put in the following ingredients:
1 cup of chickpeas (save 1/4 cup to use later to thicken sauce if need be)
1/2 – 1 red pepper
2 tsp flax seed
splash of Apple cider vinegar
spoonful of coconut oil
1-2 tbsp paprika (smoked if available)
1-2 tbsp mustard
2-3 cloves of garlic (optional)
1/4 of an onion (you can use less or none.. we love flavour!)
splash of maple syrup
salt and pepper to taste
other spices you enjoy – have fun and experiment!
Blend all ingredients, slowly add water until sauce is slightly runny (flax seeds will help to thicken it) Coat the cauliflower when the sauce has thickened up a bit (takes a minute or 2) Bake at 425 degrees for 30 minutes on top rack. Make sure to space the cauliflower out so each piece gets crispy!
